Per the Ex Libris documentation, it is now possible to enable Booking by dates and time and the calendar will abide by the opening/closing hours as set in Alma. This option is configured here:
Configuration Menu -> Discovery -> Other -> Customer Settings -> include_library_hours_booking_request
To have the time option to display on the Booking request form, the Terms of Use for those materials (Booking rules) must have Booking Resolution set to “Minutes”. Below is an example for the Gear2Go TOU:
